The Wellington VORS takes the same lineage as the VOS and extends it to nearly fifty years of average age — one of the most distinctive Palo Cortados in production from the Sanlúcar tradition, where the wine begins as a Manzanilla and develops its character under the distinctive influence of the Atlantic. At this age, the biological origins are almost entirely absorbed by the oxidative character, but they leave their mark in a precision and finesse that distinguishes this from Jerez Palo Cortados of similar age.
The nose is intensely complex: old orange peel, dried fruit, leather, beeswax and an ancient mineral note from decades in old wood. The palate is full and elegantly structured, with excellent natural acidity and a very long, complex, dry finish. Rich and intense, with dried fruit, leather, caramel and coffee, and yet a distinct balancing freshness — a rich yet vital wine of exceptional quality.
