El Maestro Sierra’s Fino is made in the same spirit that has guided the house since its foundation in 1830: with patience, minimal intervention and an absolute respect for traditional methods. At around five years of age, it is aged in the cellar’s old American oak butts under an active layer of flor — butts that were, in many cases, made by the bodega’s founder, José Antonio Sierra, himself a master cooper by trade.
The colour is a pale straw gold, bright and clean. The nose is fresh and precise: chamomile, green almond, a light citrus note and the characteristic clean yeast of healthy flor. The palate is bone dry, with a saline mineral quality and a long, pleasantly bitter finish. An honest, traditional Fino of real character — the foundation upon which the bodega’s more extraordinary VORS wines are built.
